I get so excited when summertime is here. Everything is green, bees are buzzing, and there’s backyard barbecuing with your loves! What’s not to love about summertime?
To me, there’s nothing that says “summer” more than my favorite desert: peach cobbler. It’s a very easy recipe that I grew up watching my mother bake every summer after my dad would bring a truck load of tree ripened Georgia peaches to our farmers market. Nothing better than a tree ripened peach with it’s fuzzy skin still on it to make the perfect skillet peach cobbler.
My twist on my mothers recipe- I like to bake it in a skillet instead of a glass dish. Everything else is the same. Simple and easy! I preheat the oven to 400* F, rub butter all over the skillet, then I chop up 8/9 medium peaches, sprinkle a little sugar and cinnamon over sliced peaches. Stir the sugar and cinnamon into the peaches so the juice is released from the peaches. In a separate bowl add 1c of sugar, 1 cup of self rising flour, 1 cup of soften butter, 1 cup of milk. Mix well! Place slice peaches on bottom of skillet then I pour batter over peaches, Take a knife and swirl batter through the peaches. That’s it! Easy right?
Depending on how much juice and crispiness you like, will change the long duration at which you bake your cobbler. I like the dough to be crispy, with a good amount of peach juice, so I bake my cobbler for 30 minutes or so until I see the edges getting crispy brown and the dough golden.
